Chewy Oatmeal Cookies
These cookies are a fall favorite around our house.
Chewy Oatmeal Cookies
Ingredients
1 cup butter, melted
1/2 cup sugar
1-1/2 cup packed dark brown sugar
2 eggs ( 1 whole egg +1 egg yolk)
2 tbsp. milk
1 tablespoon molasses
2 teaspoons vanilla extract
2 cups bread flour
2 cups quick-cooking oats
1-1/2 teaspoon baking soda
2 teaspoon ground cinnamon
1 tsp. nutmeg,
1/2 tsp. cloves
1 teaspoon salt
1 cup each golden raisins and chopped pecans
1 cup dried sweetened cranberries
Directions
In a large bowl, mix butter and sugars. Add the eggs, milk, molasses and vanilla; beat well.
Combine the flour, oats, baking soda, cinnamon, nutmeg, cloves, and salt; gradually add to creamed mixture and mix well. Stir in the raisins, pecans and cranberries. Chill the dough ( at least two hours). Use a disher to scoop even amounts of dough and place 2 in. apart onto greased baking sheets or parchment lined baking sheets.
Bake at 350° for 9-10 minutes or until lightly browned. Cool on pans for 2 minutes before removing to wire racks. Yield: about 5 dozen.
