Also, if you don't necessarily want to put tofu or meat substitutes in the rolls, you might want to substitute rice (which is one filling I've used over the years) with quinoa. Yay protein.
(Though I will admit I'm partial to beans, nuts, and quinoa because of the pesky soy allergy.)
