Courtesy of the Family Circle Kids' Cookbook lo these many moons ago:

150 grams of chocolate (usually dark), chopped
400 grams condensed milk
100 grams white marshmallows, diced into small bits

Microwave the chocolate for 1 min on medium & stir. Add condensed milk. Zap for another minute & stir. Add marshmallows. Continue zapping & stirring until it's all smooth.

Now, recipe says to serve hot or cold on ice-cream. I usually (read: at parties in my teens) serve with marshmallows and fruit, as a fondue or dipping sauce.

I spend a fair bit of my time at the moment cooking in a group where the dietary restrictions are (1) vegetarian (2) dairy-free (3) gluten-free (4) cane sugar-free.

And, well, cake is nice.

So I took my standard recipe, and we adapted it.

Standard ingredients. )

The modified version goes like this:

300g dark chocolate
200g soya Pure (or other hard or semi-hard fat)
5 eggs
250ml agave syrup
1 tsp vanilla
300g hazelnut meal
pinch of salt
raspberries

Pre-heat oven to 180degC.
Melt chocolate and fat together (either in a heat-proof bowl over simmering water, or in the microwave).
Beat eggs, agave syrup, vanilla (and any booze you want to use) together until thick.
Pour the melted chocolate mixture into the egg mixture and stir thoroughly.
Add the hazelnut flour and the salt and mix thoroughly.
Scatter raspberries liberally across the bottom of your desired baking pan (I tend to go for large rectangular pans, ceramic if I can get them) and stick in the oven for about 30 minutes. If at any point it starts to burn, cover with a sheet of tin foil.

Notes
This was our first attempt at this particular version of the modifications, and next time I'll probably either up the hazelnut meal a little more, or ditch one of the eggs. I'll also be rather more liberal with the vanilla, because the roasted hazelnut flour we used needed a little more of a boost than it ended up getting with these quantities.
Another excellent variant is halving and coring pears, filling the hollow with brown sugar, placing them cut-side-down in the baking tray, and using almond meal & cinnamon/nutmeg/etc in the batter.

Very very adaptable recipe with brilliant GF results. Completely diet destroying (unless one is aiming for butter, fudge, chocolate and nuts).
For those who can't have coffee, chocolate, nuts, etc - this is a surprisingly good recipe for you, as it's entirely adaptable to what you like and what you have lingering in your cupboard. I've made a bunch of suggestions for alternate ingredients, but feel free to go wild with ones I haven't listed. I'm sure your results will be ace.

Also, if you DO make it GF, ask people to taste it, then tell them it's GF. Nobody will believe you. I've done this half a dozen times, and the reaction is always the same.

Hi there!

I'm trying to find a cake recipe for my nephew's first birthday--his mom really wants to make him one and take pictures. However, he's allergic to wheat (not gluten or other grains), milk, peanuts, and eggs. We do have egg replacer, milk replacer, and rice and arrowroot flour, but none of us know anything about cooking with them.

Any help, please? His birthday's on August 18.

Ingredients for 24 cupcakes:
0.75 cup white sugar
1 large egg
1.5 cups self-raising flour
0.3 cups unsalted butter
3 large bananas
24 pieces of butter fudge

Preheat oven to 175 C/Gas 4.

1. Whisk egg and sugar until light and fluffy.
2. Whisk in melted (cooled) butter.
3. Sift in flour, whisk again.
4. Add egg slowly, continue whisking.
5. Beat in mashed bananas.
6. Spoon evenly into cupcake cases.

Once the cupcake mix is in the cases, cut 12 of the pieces of fudge in half and push each half piece into the tops of the cupcakes. Bake for 16-20 mins, or until golden and springy to the touch. (Obvious statement about skewering them and making sure the inside is cooked here.)

Once they’re baked, allow them to cool and then melt more fudge using a bain-marie and spoon the melted fudge into the hole left by the fudge pieces during baking.

Finally: nom.

Lots and lots of them!

In this post in my journal.

7 different types of cookies. One's a repeat - the macaroons. The others are new.

Yes, I've made 8 batches of cookies over the last 3 days. I'm crazy. =)

The peanut butter blossoms, will obviously be an issue for anyone with a peanut allergy, but the others don't have nuts in them.

I've used all white flour in some and half-white, half-wheat flour in some; some I used regular granulated sugar and some I've used baking Splenda. They all have come out fine. Using wheat flour makes them a little 'grittier' and 'crunchier', but still good.

The only one you *can't* make substitutions in is the macaroons, b/c they won't come out right at all.

Oh - and I'll post up my decorator frosting recipe once I make that this weekend. =)

If anyone has any specific questions about anything, just ask!

There's also a link to a recipe for a Hermit Cake (in my post) - it has walnuts and pecans in it, for those with nut allergies - it makes a big-ass cake that you wrap in Sherry/wine-soaked towels after it's baked. It's my dad's fave, and a friend of mine's too, and my mom ends up taking a chunk of it to work for her co-workers to fight over. =) (( the '4 hours' tag goes w/ the Hermit cake - it bakes at a low temp for a long time ))

zarhooie encouraged me to post this here, despite the massive lack of actual measurements. I've tried to fill in guesstimates and American equivalent ingredient names where I could.

My kid is nomming on these cinnamon sticky buns right now, with intense nomminess. It's not a supersoft airbread recipe like the candy-type sticky buns from the baker's; there's a lot more bite and mouthfeel to it.
