Yummy Dinner

On the menu tonight (and a frequent quick dinner in our house): Dijon coated pan-seared pork chop with ranch rice. We started making this when I was diagnosed with gestational diabetes and it worked well for me.



For the pork chop; we usually buy a two pack of boneless pork chops. Prior to seasoning we cut the chops in half lengthwise (made the portion more appropriate and cut the cooking time down). Season the chops (on both sides) with salt, pepper, dried thyme (if you want) and brush liberally with dijon mustard (I do not recommend using whole grain mustard for this). Heat some oil in a pan. Cook the chops for about 3 minutes, flip and cook an additional 3 minutes. Serve with some more mustard for dipping, if desired.

Ranch rice - we usually use brown rice or a whole grain rice blend. Place rice on stove with recommended amount of water, 1 tsp butter (if desired) and one packet of Ranch Dressing seasoning blend. Bring to a boil, turn heat to low and cook for about 15 minutes. This does benefit by allowing to sit with the lid on off the heat for another 15 min or so.

We usually serve this with whichever vegetable we have on hand in the freezer, microwaved up.

The whole thing takes less than an hour from start to finish.

Oh, I was wondering what ranch rice would turn out to be! I was expecting maybe something Tex-Mex-ish, but this sounds very intriguing! About how much rice is used per packet of seasoning?

I will have to recommend this to my SIL, who is a big ranch dressing fan. :-)
