Cheese Bread
This is my favorite bread recipie. You can make this in a bread machine but it lacks the proper tooth if you cook it in the machine. I let the machine do the mixing by setting it on the dough cycle and then take it out and knead and shape by hand. This is fabulous with butter, hot out of the oven, and a good soup and salad. It also makes wonderful garlic bread. Just slice, and spread with garlic butter and then toast under the broiler.
Cheese Bread
1-1/2 c. scalded milk
1/3 c. sugar
¼ c. butter
1 tbsp salt
2 pkgs. yeast
½ c. warm ( 85deg). Water
1 egg
3-6 c. bread flour
1 ½ c. cheese
Scald milk add butter and let melt. add sugar and salt and stir to dissolve. Let cool to 85 deg. Sprinkle yeast on water and let dissolve. Combine milk and yeast mixtures. Add egg, stir well. Stir in cheese. Add flour a little at a time until dough forms. Knead until smooth and elastic.
Put dough in an greased bowl and turn to coat. Cover and let rise until doubled. Punch down and shape into loaves, put into a greased loaf pans. Cover with a clean tea towel and let rise until doubled. Bake at 375 for 30 min.
