Breakfast Burritos

This is a really simple food, but so easy and quick and delicious that my roommate and I eat it at least once a week for breakfast. It fulfills many nutritional requirements, and is vegetarian (if you eat eggs).

Breakfast Burritos:

This recipe makes two really big (10"-12" tortilla) burritos, or three medium (8"-10") burritos.

Ingredients:

a bit of canola oil or butter or whatever you grease your pans with
1 small-medium zucchini, or 1/2 of a large zucchini
1 medium yellow onion
a couple handfuls of frozen corn
3 eggs
1 12-oz can black beans
some cheddar cheese
some hot salsa (or whatever kind you prefer)
2 or 3 tortillas (depending on how large you want the burritos/how many people you're serving)

Instructions:

Put some canola oil in a frying pan; fry the onion (chopped) for a bit, then add the zucchini (chopped into small pieces), then add the corn. Let them cook for a bit. Then add the eggs (beaten), and cook for a while. Don't freak out if the eggs stick to the pan, even if they stick to the pan a lot. This is actually a good thing, as it means there's not too much liquid in the pan. Once the eggs are cooked, add the black beans (rinsed) and then the cheddar cheese (however much you like). Once the cheese melts a little, put in four or five tablespoons of salsa (hot salsa is honestly best) or however much is needed to make the right consistency. Let the whole thing cook for at least another five minutes, then put the mixture into your tortillas and fold them up. NOM LIBERALLY.
