Carrot Cake

For [personal profile] stultiloquentia, who has a birthday coming up.

CARROT CAKE


2 cups sifted flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 cup cooking oil
1/2 tsp. salt
2 cups sugar
4 eggs
2 cups carrots, grated
1 cup walnuts, chopped

ICING
1 stick [butter] melted
8 oz. pkg cream cheese
1 lb. confectioner's sugar
1 tsp. vanilla
[CAKE] Sift dry ingredients together, add oil and sugar. Add eggs, one at a time while beating. Fold in carrots and nuts.
Use three 8" layers or a very large loaf pan, greased and floured. Can use a tube, angel food pan.
Bake at 350° oven for 50-60 minutes.

[ICING] Beat together. Add [optional] 1 cup [extra] chopped walnuts.

Notes: Icing recipe originally says to use margarine, not butter, but we've been making this particular cake in the family for longer than I've been alive, and my mother always uses butter. Also, one can generally skip adding chopped walnuts in the icing too - 1 cup in the cake is generally enough. Re: the large pan, 9 x 13" will give decent thickness of cake and leave some icing leftover.
