Grilled Cheese Pie

Let me make one thing totally clear: this is starchy, mid-century comfort food, so if that's not your scene, you will probably hate this recipe. It's not so much a pie as a moist, dense, cheese-flavored pancake baked in a pie tin. (Mmmm, are you salivating yet? I am!)

3/4 c. flour
1 c. milk
1 egg
salt & pepper to taste
1/2 c. grated cheese (Muenster or other mild cheese), plus extra for garnish

Whisk together everything but the cheese. Stir the 1/2 c. of cheese in and pour the batter into a greased pie tin (pie pan, pie plate, whatever they call it in your neck of the woods). Sprinkle additional cheese on top. Bake at 425 degrees F for 20-25 minutes, until brown around the edges and set in the middle.

You could tart this up any number of ways: herbs or spices, bits of sauteed onion, sharp cheddar, or what-have-you. I have done none of those things, because you just don't mess with the doughy, delicious perfection of childhood nostalgia! But if your mom didn't bake this for you on snow days in elementary school, you might feel more free to experiment *g*.

Sounds yummy!

Just a question: is that plain flour, or self-raising?

Cheese-flavored pancake in a pieplate? That sounds amazing. It also sounds like dinner tomorrow night. :D

I am always up for things that fall in the same food categories as grilled cheese sandwich. Wonder if we've got a pie pan/plate floating around the house.

OMNOMNOM. I think this recipe officially defines this comm for me! Seeing as my definition of "omnomnom" often involves comfort food. (And yes, I probably would go for cheddar or some other cheese, but not mess with it too much beyond that.)
