Cornmeal Pancakes

 So, I'm bored out of my mind for various reasons, and go on a journey of discovery through our less-used cabinets. What do I find? An almost empty, still good bag of cornmeal that I haven't touched in far too long.

Due to lack of cheese to make jalapeno cornbread, I settled for cornmeal pancakes!

1 cup cornmeal (not masa harina, we're not making tortillas)
1 cup flour
2 teaspoons baking powder
~1.3 cups milk
1 egg
1/2 teaspoon salt
honey
cayenne
black pepper
garlic powder
paprika

Now, I was experimenting, so the proportions on the spices/honey are a little ambiguous. I added to taste by doing this:

Mix the cornmeal, flour, baking powder, salt, and milk into a bowl. Add (around ish) 1/2 teaspoon of each spice (lower the cayenne if you're not a fan of heat), taste. It should be a little spicy after a bit, but not overwhelmingly. You want to complement the cornmeal, not negate it. 

I don't keep sugar around the house like, ever, nor much butter, so I substituted honey. Honey is the nectar of the gods, I swear. It never goes bad and I buy this delicious stuff made from wildflowers at our local farmer's market. You can use the normal store-bought brand without any difference ^^. Squeeze in quite a bit of honey, stir in, taste, etc.

I did this a total of three times, and didn't skimp on the honey. Remember, this recipe doesn't have anything else to make it even a bit sweet, so to balance the spices, don't go light. But be sure to taste at each step!! You don't want this to go overbalanced either way.

Once it tastes good, crack the egg and stir it in.

After this, normal pancake cooking methods are employed!

Please keep in mind that cornmeal pancakes often take a bit longer to cook than regular pancakes, so keep a close eye on them. They should brown and not break when flipped, like normal. Poke them a couple of times with whatever you're using to flip them, and if it doesn't feel mushy inside, they're done. 

This recipe makes around 6 pancakes, and I served them with a bit of butter on top, and two over-easy eggs. Big hit with my overworked, sleepy brother :)
