I'd forgotten about this type of cake! Recently I was trying to think of a way to make a vegan cake, but every one of the "classic" cake types gets its structure from eggs, one way or another. I don't understand how this particular recipe works, but it does work, and that's the important part.
I happen to be allergic to vinegar (!), so I'd use lemon juice. A whipped type of frosting made with plain white vegetable shortening, cocoa, and powdered sugar is better than it sounds - you don't get the buttery flavor, of course, but the chocolate and vanilla are pretty good themselves. Or I might just make a chocolate glaze. But now I know what to make the next time I'm invited to a party where there will be vegans :-)
