Balsamic Chickpea Salad

This recipe is really versatile, and goes well on top of any greens or toast! I even put it on rice sometimes! It really shines the best on some kale, maybe add some couscous if you're feeling crazy!
INGREDIENTS
1. add the wet ingredients, aquafaba, balsamic, olive oil, optional swirl or two of the glaze to a bowl (or container tbh i just put it all in the same container i store it in, lol) and whisk/shake it until homogenous. add the garlic, taste and adjust to your palate. i measure everything with my eyes and the Vibes with this, you must do what works for you...
2. add the onions. let them marinate in the sauce first, especially with yellow onions like i use. idk, about a minute or two.
3. LAY the chickpeas ontop of the onions. DO NOT STIR! the chickpeas should be a layer on top of the marinade and onions.
4. lay the carrots on top of this, and the cucumber on top of those. you can adjust the vegetables around if you want them to be more Juicy with the Marinade, but i like a very seasoned onion with more lightly seasoned carrots and cucumber, but hey, whatever works for your palate.
5. let it sit until you remember you made it and shake the shit out of it/stir before serving. i like to plate it on top of kale and lettuce and eat it as a salad topper.
---OPTIONAL VEGGIES/FRUITS ADDITION SECTION---
i often add tomato to this, add it in at step 4 with the carrots. i like how they suck up the marinade. i have also been thinking about putting mango or strawberry in it, or at the very least pairing it with those fruits (julienned or finely cubed) on the side with the kale salad. could be yummers!

INGREDIENTS
- ONE CAN OF CHICKPEAS - yes the can, it tastes good with home cooked from dry beans too but the canned aquafaba is much saltier and more fatty than what ive been able to make. theyre cheap enough anyway and it tastes much better. if your aquafaba is nice and Thicc, feel free to make it yourself. its also cheaper to buy them dry.
- a BIG glug of the liquid from the canned chickpeas - also known as aquafaba. save this shit by the way, whip it with sugar and bake it in little spoonfuls. thank me later.
- a moderately sized glug of balsamic vinegar - i measure with my eyes
- a somewhat smaller glug of olive oil
- !OPTIONAL! a swirl of balsamic vinegar glaze - i find this makes it thicker and creamier, but its not necessary.
- ~2-3 garlic cloves - crushed and finely minced
- ~3/4 of an onion - use your judgement.
- a shitton of julienned cucumber
- a good amount of julienned carrots - idk, i used about 3/4 of a pretty good sized carrot.
