Our story recipe begins with a wee Kat, aged 3, and her mother. Mom was not pleased with my veggie input, but she knew I loved four things: bacon, mushrooms, cheese and pie. Mom tracked down this recipe (from my brother's godmother, according to the note in her Book Of Food) and I've been hooked on spinach ever since!

The best part about this recipe (other than my love of spinach) is that most of the prep-needing ingredients can be prepared weeks or months ahead of time and stuck in the freezer. All you need to do is pull 'em out, give them a quick zap in the microwave to thaw out and voila! almost-instant dinner. For this reason, I have not provided pictures of the prep of the ingredients because, well, I just pulled everything out of the freezer. :)

NOTE: The mushrooms should have flavor and texture. The easiest way to do this is to slice up the mushrooms and sautee on medium with butter (or bacon grease) and a little bit of sherry. They take about 45 minutes to cook down, so make sure you've got time. I usually make 2 or 3 packages of mushrooms at a time and then freeze whatever I'm not using that day.

This is the Tamarack Blueberry Muffin recipe from 500 Treasured Country Recipes from Martha Storey and Friends. This evening, I replaced the fresh blueberries with frozen raspberries (a bag and a half of 'em), but I have made them with blueberries before.

PS: That book I linked to above, the Martha Storey one? It is one of the most reliable and consistently good cookbooks I own. If you have one cookbook, you should have that one.
