I made this in the crock pot to have something for lunches this week and I have to say it is damn delicious

Thai red curry thing

1 can lite coconut milk (it was leftover of 2 cans of coconut cream where I turned the super thick part into mousse)
~2 tbsp red curry paste
knob of ginger minced
~.5 tbs dried ginger
2 tbs garlic minced
16 oz pearl onions
3 red bell peppers diced
1 sweet potato diced
4 chicken thighs

throw the coconut milk and spices into the crock pot and mix. then add everything else and make sure it get s a coating of the sauce. let it hang out on low heat for 5-7 hours or high for 3-4 hours or until the chicken is cooked through.

this was fantastic and next time I will use less chicken and more sweet potato.
