Sweet Potato Latkes

We've had a big honking sweet potato in our root drawer for the past couple of weeks. It was my turn to cook, and I decided to do something a bit different with it.
The only recipe I could find for sweet potato pancakes in our cookbooks called for previously cooked, mashed sweet potato. This wasn't what I had in mind, but rather the classic grated potato pancake with sweet potatoes instead of spuds. So I modified the conventional recipe for latkes.

Serve with butter and cinnamon. I liked mine with cinnamon and sour cream. Applesauce is also a traditional topping for latkes, but might be too sweet for these.
In the future I might add cinnamon and nutmeg to the batter when I mix it. One of my tasters suggested frying the latkes in melted butter rather than oil.
