Tomato and Mushroom Chicken
Jun. 10th, 2009 07:26 pmSo I finally actually measured and wrote down what I did when doing my "hmm, a little of this sounds good, a little of that would be good" impromptu cooking! The one thing I didn't do is keep track of how long it took to cook the chicken, so the "45 minutes" part is a guess.
This involves canned tomatoes (but fresh would be good too) and marinated mushrooms, along with chicken, obviously; I think this would work if you have a meat substitute that has the texture of chicken breast. Amounts below are for serving two people when pasta is also served.
Ingredients
- 8 chicken tenders, cut in half
- Half of a large onion, diced
- One 8-oz jar marinated mushrooms (I used portabella with red peppers)
- 1 14.5-oz can diced tomatoes (I used "petite diced" because that's what I had)
- Approximately 1.5 tbsp of red wine vinegar
- Approx. 1/4 tsp dried parsley (I didn't measure this exactly)
- Approx. 1/4 tsp dried oregano (ditto)
- Dash of basil (two light shakes out of the container)
- Salt and pepper to taste
Directions
Heat oil in a pan on just-past-medium. When it's hot, add the pieces of chicken. When they're white or very light brown on one side, add the onion. When there's no visible pink and they're at least light brown, turn the heat down to just-before-medium.
Add the marinated mushrooms (along with the liquid in the jar or can), the diced tomatoes, the vinegar, and stir everything together. Then add the parsley, oregano, basil, salt, and pepper. Stir again, turn the heat down to medium-low (my stove has "Lo", 4 dots, "Med", 4 dots, "Hi" - I put it on the second dot past Lo), and cover. 15 minutes or so later, eat!
If you're making pasta, you'll probably be starting it after you cover the skillet.
After I served this, my husband added some (he didn't measure) sriracha to his, and adding a tiny bit to mine did make it even tastier, but it was delicious without that, so it's not part of the "official" recipe. :)
