This was dinner tonight, made from assorted bits and pieces from the fridge that had accumulated. It turned out very nice. I will probably change a couple of things the next time I make it. See notes at the end.
2 c medium shells
2 T butter
8 oz mushrooms, sliced
3/4 c onions, chopped
1 lg garlic clove, minced
1 c ham, chopped
1 t thyme
1/2 c wine (I used chardonnay)
4 oz peapods
~~~~~~~~~~~~~
1. Cook pasta according to package directions. Drain.
2. Meanwhile, cook onions, garlic and mushrooms in butter, over medium heat until onions are about half done.
3. Add ham, thyme and wine. Simmer a couple of minutes - until sharp alcohol aroma starts to dissipate.
4. Add peapods and pasta. DO NOT stir. Cover but leave cover cocked. Cook for about 3-5 minutes, until peapods and pasta are heated through from the steam.
5. Stir to combine and serve immediately.
Notes: Next time I will probably use more wine. The taste was there but I would have liked it more pronounced. Some diced sweet peppers would be a nice addition, too, I think.
