I just made this for lunch and oh my goodness it is yummy.
1 package cubed butternut squash, frozen. You can use home preserved stuff too if you want.
1/4th tsp each curry, cumin, ginger, coriander, nutmeg, cinnamon
1 TBL butter
1/4 cup brown sugar
Special equipment:
small covered baking dish (I use a corningware one with a glass lid; you can use a small casserole dish with tinfoil)
Spray baking dish with nonstick spray. Dump squash and spices in and mix well.
Cut butter up into little pieces and distrubute throughout pan.
Sprinkle brown sugar over the top, not mixing in.
Cover and bake at 350 for 30-40 minutes, stirring about 10 minutes before it's done to get the squash all mushed up.
Serve with rice and lean meat.
It looks kinda gross but oh, it tastes SO GOOD. I think you could add some cream to this and make a delicious soup as well, maybe for leftovers?
This dish is spicy and flavorful, with the squash not allowing itself to be overpowered by the flavors of the spices. Pure num!
NOTE: I updated the spice amounts because someone pointed out that it was a LOT of spice for a small dish. I just sort of throw spices in until it looks right, but 1 tsp was way too much.
