I made this as a snack today somewhat impulsively and it came out quite good (to my surprise), so I thought I'd share.
I'm sorry for the low-precision measurements but I wasn't expecting to need/want more precision when I made this. And my kitchen scale is broken so I couldn't weigh things out at the moment anyway.
Ingredients (one serving)
--1.5 C water
--3/4 C rolled oats
--small handful honey roasted peanuts (25?)
--3 pieces candied ginger, finely diced (maybe a scant tablespoon?)
--pinch cinnamon
--dash nutmeg
--milk/cream/butter to taste

Method
- Put water, peanuts, and diced ginger in a small saucepan on the range on high heat.
- When the water comes to a vigourous boil, add oats and turn down the heat a bit (so that it's still boiling but so you aren't in danger of boiling over). Stir occasionally.
- When the oats have reached the consistency you like, take off the heat and put into your bowl.
- Mix in spices and dairy.
- Enjoy!
