Chevre and Figs

A delicious snack or a full-blown entree. Totally up to you. :)
Needed:
several (3-8) dried figs, chopped finely
small-to-medium handful of sliced almonds, toasted lightly
1 log of chevre, room temperature
Place cheese in a small microwave or oven-safe bowl. I like to use a small pyrex or pottery dish. If you're using an oven, preheat it to 250*F. The cheese should be easily smush-able with the back of a spoon or a small silicone spatula. Using your implement of choice, gently create a well in the middle of your cheese pile. After this is done, add about half your chopped up fig bits and about 1/3rd of your sliced toasted almonds. Fold these into the cheese. Create another well, add the rest of the fig bits and another third of the almonds. Fold these in also. Finally, add and fold in the last of the almonds.
Now you want to warm the cheese up, but not so much that it melts. I've found that 250*F for about 10 minutes is good, or 3-5 minutes in the microwave on medium (50%). YMMV, so keep an eye on it!
Either serve on a bed of mixed greens with grilled chicken with fig compote as the dressing with another handful of toasted almonds, or with water crackers and a spoon.
