That sounds fascinating. I've always browned my meat first, and then cooked everything on top, but my meat has been disfavorably compared to combat boots. Perhaps that's why!
Speaking of interesting condiments, I always add a pinch of clove in my beef/lamb stew. Adds some umani notes. (de do de la).
