Crock Pot Beef and Sweet Potatoes

* 2-1/2 lbs. beef for stew, cut in chunks
* 1 tsp. ground cumin
* 1/2 tsp. ground cinnamom
* 1/8-1/4 tsp. cayenne
* 1/2 tsp. salt
* 1 can (14-1/2 oz.) diced tomatoes
* 1/2 onion
* 3 cloves garlic
* 2 large sweet potatoes, cut into chunks
* 1/2 cup regular or golden raisins
* salt
* hot cooked couscous
* chopped, toasted almonds (optional)
* chopped, fresh parsley (optional)
Instructions
Coat meat with spices, combine with potatoes, onion, and garlic in crockpot. Add raisins and tomatoes on top. Cover and cook on LOW 8 to 9 hours or on HIGH 4 to 6 hours or until beef and potatoes are fork-tender. (No stirring is necessary during cooking.)
Serve over couscous. Garnish with almonds and parsley, if desired..
