One of my favorite recipes I've developed uses up beets and purple cabbage (it just looks terrifying, if you use a green cabbage).
Also playing with beets, I love this soba noodle salad, which is good cold or hot. Also, I love that it doesn't use peanut butter, so it's friendlier for pot lucks.
