This is probably the best cheater's recipe I've come up with since cheater's pad thai (2TBL peanut butter, 1 packet Taco Bell hot sauce, cilantro, all over cooked ramen noodles).

Go buy some of those frozen breaded chicken nuggets. Cook as directed in the oven, but sprinkle them liberally with Parmesan cheese.

Once this is done, you've effectively cutout the entire process of breading and frying chicken pieces, and saved a bunch of time and energy! Awesome, right?

Assemble your parm: in a 9x12, layer chicken nuggets with spaghetti sauce and mozzerella cheese, ending with the cheese on top. Bake at 350 for 30 minutes and serve with noodles.

WIN, and double win! I gotta try both these two... :)

Although if you want triple awesome, add Extra Stuff to your spaghetti sauce while your nuggets are baking... I usually go with oregano, basil, parsley, and Garlic.. and use actual shredded parm (which melts better) rather than "kitty litter" (which actually is much better at absorbing extra pepperoni grease on pizza)... but neither of these steps adds to time and not much to effort.

Hm, hadda go to the store tonight anyway... :)

You can also mix half bread crumbs with half parmesan cheese, some black pepper, garlic powder, and oregano, put it in a shallow bowl/container, and dredge chicken cutlets in the mixture (heap any leftover mixture on top ~or~ use it to top some roasted cauliflower or something) and cook in a 350* oven until cooked through (20 minutes? I think?). You could do straight up chicken breast instead of cutlets (which are basically chicken breasts... SLICED LENGTHWISE dun dun dun). It's not QUITE as easy as the frozen chicken breasts/nuggets, but it's still pretty easy, and there's no dredging with multiple liquids/flour/toppings/etc.

Winner! Used Trader Joe's Panko Breaded Chicken, and the good Parmesan... Classico Roasted Garlic sauce, didn't adulterate 'cause was short on time. Nuke the parm-topped chicken, arrange in an 8x8, add mozz, sauce, more mozz, and bake in my convection-toaster-oven until the top mozz layer was toasty. Much with the nommage. Leftovers==lunch! :)
