This is a good workday meal to stick in your crock pot!
You will need:
-- 2-3 chicken breasts or boneless, skinless thighs. I prefer breast, but you can use thigh if you can find it!
-- 1 normal-sized jar salsa. You're going to need about a cup and a half to 2 cups.
-- 1 brick cream cheese. You can use fat free or regular, whatever floats your boat.
-- 1 can corn, drained. You can use frozen as well.
Ok, so this is really, really difficult. Try to keep up with me on this one. Put the chicken into the crock pot. Pour salsa over it. Let it cook on high for 6-8 hours. Shred chicken with forks. Mix in cream cheese until smooth. Add corn.
Serve over rice, with noodles or with corn chips.
SO HARD, RIGHT? I love this concoction.
