Beef Roast

This recipe is a family favorite and possibly one of the easiest to make.
Generally we'll prepare it right before church, put it in the oven, and it's ready when we come home for lunch. Not to mention the house smells FANTASTIC!

The only thing generally eaten along with it in my house is a side salad and obviously the vegetables that cook with the roast.


Ingredients:
3 lb beef pot roast - can be larger or smaller depending on how many you want to feed. 3 lbs seems to be just the right amount for my family of 5.
2 cans cream of mushroom soup
1 pkg Lipton onion soup mix
Potatoes - peeled and 1/2'ed
Carrots - baby or cut into 1"

Put roast, potatoes, and carrots in pan. Sprinkle onion soup mix over all. Top w/ mushroom soup. Cover with foil and cook at 325 degrees for 3 hrs.
Note that time in the oven, means a more tender roast. It's okay if you go a little over, but I'd suggest not taking it out early, because you'll have to pull out the knives.

My family does this too! Sometimes we use golden mushroom soup, and sometimes we use a big can of spaghetti sauce, though. (We tend more toward "fry up half a ton of onion and garlic" than "onion soup", but that's mostly because Dad doesn't really like onion soup.)

I can also assert that 3lb is enough for a family of three with leftovers enough for 3-4 days worth of sandwiches.

Low and slow does the job, as does a crockpot. Yum! Fall-apart good!
