So we're slowly going through the suggestions from the onion post (thank you all, by the way; you are awesome), and cooking at least one a day. 

Today's dinner was apricot chicken, as suggested by [personal profile] alias_sqbr . It was really, really tasty. So thank you so much!!!

We used a modified version of the recipe on Rachael Ray's website.

Ingredients

  • 2 tablespoons extra-virgin olive oil, 2 turns of the pan
  • 2 pounds chicken tenderloins, cut in 1/2 across on an angle (We used chicken breasts, cut into cubes)
  • Salt and pepper
  • 1 large onion, chopped
  • 2 tablespoons cider or white wine vinegar
  • 12 dried pitted apricots, chopped
  • 2 cups chicken stock
  • 1 cup apricot all fruit spread or apricot preserves
  • Chili powder
  • Cornstarch

Directions

Heat a large skillet with a lid over medium high heat. Add oil and chicken. Season with salt and pepper. Lightly brown the chicken a few minutes on each side, add onions. Cook 5 minutes. Add vinegar to the pan and let it evaporate. Add apricots and stock and about a half teaspoon of chili powder. When stock comes to a bubble, add preserves and stir to combine. Cover pan, reduce heat and simmer 10 to 15 minutes.

When it's finished, stir together a heaping teaspoon (of the silverware variety) of cornstarch with about a cup of the broth. Return to the pan and let simmer for about 4 to 5 more minutes. Serve when it's thickened.

We liked it over jasmine rice.

Hooray!

And that looks...very little like any recipe for apricot chicken I've ever cooked. But as long as you enjoyed it it's all good :)

Well, the one I've actually made is just french onion soup mix plus chicken plus apricot nectar. But some of the ones I looked up when making sure that it was a legit recipe containing actual onions before reccing it to you were, approximately, chicken + (the ingredients of french onion soup) + apricot nectar, which is what I was expecting :)
