Creamy White Chili
Apr. 23rd, 2009 04:48 pmThis recipe is another family favorite, but generally best when it's cold outside, since it's a warm soup.
Generally eaten with cornbread.
Ingredients:
1 lb boneless, skinless chicken thighs, cut into bite-size pieces
1 1/2 teaspoon garlic powder
2 cans (15 1/2 oz each) navy or great northern beans, rinsed and drained
1 can (14 1/2 oz) chicken broth
1-2 cans (4 oz each) chopped green chilies Like it hot? Feel free to add more!
1 teaspoon oregano
1/2 teaspoon cayenne pepper
1/2 cup whipping cream
1 med onion, chopped small
1 Tablespoon vegetable oil
1 teaspoon salt
1 teaspoon cumin
1/2 teaspoon pepper
1 cup (8 oz) sour cream
Saute chicken, onion and garlic powder in oil until no longer pink.
Transfer ingredients from frying/saute/sauce pan to cooking pot.
Add beans, broth, chilies, and seasonings.
Bring to a boil.
Reduce heat and simmer, uncovered, for 30 minutes.
Remove from heat.
Stir in sour cream and whipping cream.
Please note that this is a very rich soup! If your tummy is sensitive to spices, I would suggest an imodium. :D

Psst.. try the recipe.. We had it for dinner and I fell in love with it all over again.
