Oat Rolls

I recently found a great recipe for oat bread that was originally meant for a bread machine. I tried making it with in a regular oven and eventually started making rolls out of the same basic recipe that turned out to be really tasty.




Oat Rolls
adapted from this bread machine recipe

450 g. flour
80 g. oats
2 tsp. brown sugar
1 1/2 tsp. salt
0,4 l. water
1/2 cube fresh yeast (or 1 packet dried)
2 Tbsp. olive oil
optional: 2 tsp. flax seeds and/or 2 tsp. sunflower seeds

Dissolve the yeast in the water. Put all the ingredients except the seeds into a food processor and use it to make a smooth and slightly sticky dough. Knead the dough for about six minutes and knead the seeds into it while you're at it. Shape the dough into 12-15 rolls and place them on a lined baking tray. Cover with a damp washcloth and put it in a warm space and let the dough rise for an hour. (tip: I put my tray on the tower of my PC to keep it warm *g*) After an hour, put the tray in the oven and bake the rolls for 40-45 minutes at 200°C/400°F.


I make the dough in a food processor so the oats are completely ground to bits. If don't want to get your food processor super messy like that you could probably grind just the oats and then mix the dough by hand or experiment with leaving the oats whole.

I have bulk loose yeast. About how much yeast is a packet?
