Chocolate& hazelnut in a soft bite of cookie. :)  Yummm, welcome to my happy place.

 

Nutella Dreams

Ingredients
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup butter, room temperature
1/2 cup Nutella
1 egg
1 1/4 cup flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
Demerara sugar
2 bags Dark Chocolate Dove Promises

Melt butter in the microwave. Add the sugars. Mix in the Nutella and egg. Mix together the dry ingredients - flour, baking soda, baking powder and salt. Stir the dry ingredients into the sugar butter mixture. Mix well. I use a miniature scoop to make portion sizes equal. Roll into a ball and roll in sugar ( I like coarse Demerara sugar for this ) Drop into mini muffin tins. Bake at 375 for 10 min. Pull out and immediately press a Dove chocolate into each cookie. Cool and store in a tin.

Peanut Butter Dreams

1/2 cup peanut butter
1 egg
1 1/4 cup flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
Demerara sugar
2 bags miniature Reeses Peanut Butter Cups

Melt butter in the microwave. Add the sugars. Mix in the peanut butter and egg. Mix together the dry ingredients - flour, baking soda, baking powder and salt. Stir the dry ingredients into the sugar butter mixture. Mix well. I use a miniature scoop to make portion sizes equal. Roll into a ball and roll in sugar ( I like coarse Demerara sugar for this ) Drop into mini muffin tins. Bake at 375 for 10 min. Pull out and immediately press a peanut butter cup into each cookie. Cool and store in a tin.

Also, where do you find Demarara sugar? The only place I'd ever heard of it before this recipe is in a song. Heh.

I just finished the last "Peanut Butter Dream" cookie for breakfast - but around here, we call them "Peanut Butter Kisses" because they have a Hershey's kiss ( or I do, anyway. The ancient official recipe on the Hershey's bag piece I have calls them "Peanut Butter Blossoms." Really.) But we do the gluten-free version - I don't know if you could sub out Nutella in this? It is GF, but it might be too soft... Someone should bake some to try it out! (Someone might be me - I'm putting Nutella on the grocery list...)

Peanut Butter Kisses (Gluten Free)

2 1/2 cups smooth (creamy) peanut butter
1 1/2 cups firmly packed light brown sugar
1 teaspoon baking soda
2 large eggs
2 teaspoons vanilla extract
sugar for rolling (regular sugar is OK, coarse sugar is better, decorator's sugar is best)
Hershey's Chocolate Kisses, unwrapped

Directions:
1. Preheat oven to 350 degrees F. Line cookie sheets with parchment or nonstick baking liners.

2. In a large bowl, beat peanut butter, brown sugar and baking soda until well blended. Add eggs and vanilla and mix on low speed until just blended.

3.Use 1 1/2 Tablespoon dough and roll into 1 1/2-inch balls. Roll in sugar and place about 2-inches apart on cookie sheet.

4. Bake until cookies are puffed and crackled but still a little bit moist looking, 11 to 13 minutes. As soon as you remove the cookie sheet from the oven, press a chocolate kiss into the center of each cookie. Immediately place cookie sheet into the freezer (or refrigerator) to set the kisses (they'll begin to melt a bit as soon as you place them on the cookie). Remove from chill as soon as kisses are set, 2 to 5 minutes.


And if your current weather is like ours, keep 'em in the fridge.

This recipe doesn't use any flour. The eggs hold the peanut butter and sugar together; the baking soda gives the crackle.

These are softer than regular peanut butter cookies, and if left at room temperature are quite crumbly. They stay really nicely set up in the fridge (although this does counteract that wonderful melty texture the candy gets.) I had them in there for 4 days, loosely covered, and they were as good this morning as when I baked them Friday.

Oh, and I must try them with mini-Reese's! The husband will love them more!
I'm looking forward to Nutella and dark chocolate kisses. Hopefully there will be cool summer nights again someday so I can bake!
