I must admit, I have never seen the point of French macarons (but if someone wants to convert me in the comments, I am ready to listen). English macaroons, on the other hand, are something I have always enjoyed, and I recently found a very good recipe for almond ones rather than the more common coconut, though I expect you could make them with either.

2 egg whites
1/2 cup caster sugar
1 1/4 cup ground almonds
2 Tbs flour
Jam of your choice.

Heat oven to 120C. Line tray with baking paper.

Beat egg whites to soft peaks. Gradually beat in sugar until it dissolves. Fold in dry ingredients in two batches very gently.

Place tablespoons of mix on the paper. With a wet finger, make a dent in the middle and add a dollop of jam.

Bake for 1 hour until very lightly coloured. Leave to cool on trays. Eat promptly - they tend to go chewy on storing, and, while I like them like this, most people prefer them fresh.

I most recently made this with cherry jam and it was delicious, but I expect you could dip them in chocolate once cooled, which is another favourite of mine.

ALMOND MACAROONS :D :D :D

I haven't tried them with jam, will definitely bear in mind next time I feel like baking! Hazelnut macaroons are also delicious and would probably taste amazing with chocolate.

oh I do something similar to this but instead of flour I use cocoa (add 3tbs) and it is amazing with orange marmalade :)
