two semi-recipes

I made a very yummy dinner tonight that was so ridiculously easy I feel guilty about posting it here, but here we go anyway.
Baked chicken & roasted baby potatoes.
Ingredients:
- a bunch of baby potatoes (I used mixed reds and golds; you could probably also use purples, too. Or bigger potatoes if you cut them down; just nothing with a really thick skin.)
- olive oil
- salt & pepper
- boneless skinless chicken breasts (or thighs, or your chicken part of choosing)
- herbs de provence (This is what I had on hand; you could totally use whatever)
For the potatoes:
1. Preheat oven to 400F.
2. Wash potatoes and cut them as needed - I halved all of mine and quartered some of the bigger ones.
3. Mix some olive oil, salt and pepper, and herbs in a small bowl.
4. Toss potatoes with oil-seasoning mix.
5. Spread potatoes out on a baking sheet or other dish (I used a Corningware casserole dish as it was what I had; baking sheet would work fine)
6. Put in oven.
Once in the oven you'll probably want to stir them once or twice with tongs now and again. I stirred them after about 15 min and again when I put the chicken in the oven.
For the chicken:
1. Spray baking dish with nonstick spray or oil of choice (I actually skipped this step)
2. Season chicken with whatever you want - I used salt, pepper, and again herbs de provence.
3. Put chicken in dish.
4. Wash your hands.
5. Put in oven.
I put the potatoes in the oven about 25 min before the chicken and they both essentially came out at the same time (about 30 min later), but I think next time I'd put the chicken in a bit sooner. (It was fully cooked, I promise).
Easiest meal I've ever made. And so delicious.
