Salsa Chicken

This is a three-ingredient meal. Four if you add cheese, five if you count the non-stick spray.
You can add rice to make it a full meal (six ingredients, seven if you count water and 8 if you count butter). Azz has a nice post on rice here.
What you need (food):
- 4-5 chicken breast halves, bone in (skinned or skinless, doesn't matter)
- one (1) jar of salsa (I used peach pineapple, but this would be good with cilantro lime also)
- one (1) can mexicorn


What you need (stuff):
- nonstick spray
- can opener (if your corn isn't in a pull-tab can)
- 9x12 pan (I like glass, but you can use whatever you've got handy)
- tin foil OR an oven safe lid for your pan
- oven, preferably in a kitchen

(Yes, I did add the last thing to the list above just so I could have an excuse to post kitchen pr0n. Sue me.)
Step the Zero-th:
Preheat your oven to 350*F.
Step the First:
If the chicken has skin, remove the skin. Generally the skin will be easy to remove on one side, and harder to remove on the other.
Lift the skin...

Then peel it back. Use a knife to cut what won't come away easily.

Step the Second:
Spray your pan with the nonstick spray, then arrange the chicken nicely in it.

Step the Third:
Add the salsa. Just pour it right on top. I used one whole jar, but you can use more or less if you want to.

Step the Fourth:
Turn the chicken so it is coated in the salsa.

Step the Fifth:
Add corms. Spread artistically across the top. Note my oven waiting patiently in the background.

Step the Sixth:
Cover pan with tinfoil and insert into preheated oven for an hour or so. YMMV on this one.

Step the Seventh (Optional):
When the chicken has reached an internal temperature of ~165*F (or when it looks cooked all the way through when cut), remove the tinfoil and cover the chicken with cheese. Put it back in the oven for 5 minutes to melt the cheese. I did not add cheese to my stuff, and it looked like this once plated:

I have leftover chicken and I'm making chicken quesadillas tonight. Mmmmmmmmmmmmm.
