recipe for s'mores cookie bars

S'mores are toasted marshmallows (usually over a fire, although I suppose you can do them other ways too) and a piece of chocolate between graham crackers. They're delicious and kind of messy and this is a cookie bar version! I took pictures of most of the steps, with a lot of gratuitous shots of raw cookie dough and my Kitchenaid mixer. Also, these pictures were originally posted in my personal journal.


  • 1/2 cup butter, room temperature

  • 1/4 cup brown sugar

  • 1/2 cup sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 1/3 cups all purpose flour

  • 3/4 cup graham cracker crumbs

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 2 king-sized milk chocolate bars (e.g. Hershey’s)

  • 1 1/2 cups marshmallow creme/fluff (not melted marshmallows)


  • Grease an 8x8 pan! Also, you can heat the oven to 350 (or you can wait a bit and do it later).

    Then: cream butter and sugar! Mmmmm, creamy. I love the mixer a lot, I do I do.



    Add egg and vanilla! Even more creamy.

    At this point the recipe says to mix the dry ingredients together and then put them in the dough. Personally I find that hard and time-consuming and it creates extra dishes, so I don't do it. Instead I do what my mom always did when she did cookie marathons every Christmas, which is start with the small ingredients (like salt, baking powder) and move up to the huge ones (flour, then chips and nuts).



    and



    ... and then the graham cracker crumbs! I flattened them by putting them in a ziploc bag and crushing them with my hands, then pounding on them with the jar of fluffer stuff. They don't have to be perfectly crushed, just crumbs.







    The other ingredients: hershey bars (preferred by s'mores everywhere, and I don't know why - I don't like them plain but I have to have them for s'mores) and fluff! Regular marshmallows don't work very well. This stuff is kind of gross (although good in sandwiches with peanut butter if you like really sticky sweet sandwiches) but better for baking.



    Anyway. You take about half the dough and slop it in the bottom of the greased pan and spread it out to cover evenly. It's a lot easier to put the dough on the bottom than on the top, so I'd err on the side of slightly less than half, even.



    Then, the chocolate! They fit side by side in this 8x8 pan. They don't quite touch but, uh, they'll melt in the oven so it'll be fine.



    Then, the fluff goop!



    Yeah, it's kind of gross.



    I did the first spoonful one-handed to get these shots but that was hard.





    It flattens a lot after you put it in. It's all smooth here, and it's only been a minute or so.



    Okay the next step gets messy, and you have to do it with your fingers: take little bits of the rest of the dough and flatten them, then put them over the fluff. It's goopy so you can't just dump the dough in and spread it the way you did the first one, because the fluff will get mixed in and that's never good. My fingers got very doughy very fast so I didn't take any mid-process shots. I made my first layer of little squashed bits too thin so I had dough left, so I went back and added it to all the gaps and put it along the edges. After I licked the dough off my fingers washed my hands, I took a final result shot.



    And, cooks for half an hour, blah blah blah. My oven is a bit hot so I usually go a minute or two under. Tada!



    (The recipe says wait until fully cooled, and boy do I ever recommend that! If you cut them up too fast the chocolate hasn't solidified yet so that and the fluff slide around and the cookies break open. If you want to eat your s'mores with a spoon, go ahead! Otherwise, wait for a while. Longer. Yes, even longer. The recipe also recommends heating them up quickly in the microwave; seriously, they will fall apart. I eat them cold. But they're your cookies! You can heat them if you want to.)
