Oatmeal Cookies with Dried Cherries and White Chocolate Chips
Based on a recipe pulled from marthastewart ages and ages ago.
What you need (stuff):
Bowl(s)
mixer
several cookie sheets
parchment paper
functional oven
Functional fridge
some sort of cooling area (I like to use newspaper)
What you need (food):
1.5 cups flour
1.5 cups old fashioned oatmeal (not the instant stuff)
.5 tsp baking soda
8oz (2 sticks) butter, softened
.25 cup plain white sugar
1 cup packed brown sugar (light, preferably)
1 tsp salt
1 tsp vanilla extract
2 large eggs
one 12oz package white chocolate chips
1.5 cups dried cherries, chopped fine (you can also use cranberries)
What to do:
Mix flour, oatmeal and baking sota in medium bowl. Set aside.
Cream butter and sugars together until fluffy and light colored. Reduce speed to low, then add salt, vanilla and eggs. Beat for 1 minute.
Add the flour mixture and slowly incorporate into the rest of the mixture.

Add cherries and chocolate chips and mix in.
Cover, and stick in the fridge for an hour until it is cool.
Preheat oven to 350.
Get out your cookie sheets and line them with parchment paper. You'll need to replace this after every batch, so make sure you've got plenty. Using two tablespoons, drop a tablespoon-sized amount of dough onto the parchment paper.
Bake until edges are golden brown (12-16 minutes). DO NOT OVERCOOK THESE. Also, do not be alarmed if you get a bit of smoke out of the oven when you check on them. It's ok.
Let cool for a few minutes before you remove them from the pan.
Produces 6 dozen cookies.
Kat's Famous Chocolate Chip Cookies
Note: this recipe is doubled because I use a standmixer and it just works better if it's doubled. Feel free to halve all amounts (except baking time) for a smaller batch.
No special equipment for this past the standard cookie-baking materials.
What you need (food):
6 cups flour
2 tsps baking soda
2 tsps salt
4 sticks butter, softened (2 cups)
1.5 cup plain white sugar
1.5 cup brown sugar (light preferred)
2 tsps vanilla extract
2 tsps water
4 eggs
2 packages chocolate chips (24 oz total)
What to do:
Preheat oven to 350*, and then mix flour, salt and baking soda together in a bowl. Set aside.
In a big bowl (or your standmixer bowl), cream the butter, sugars, vanilla and water together on medium high speed until light in color. (If you want to eat some cookie dough, this is the point where you should set aside a little for nom-age.) Add eggs and beat some more until fluffy and creamy.
Add in flour mixture slooowwwwllllyyyy. This is *crucial*. Stir it a lot.
Add in chocolate chips and mix.
Drop by heaping tablespoons onto a lightly greased cookie sheet. Bake @ 350* for 10-12 minutes. I prefer the shorter amount of time. Cool cookies on pan for a few minutes then remove to cooling rack/newspapers to finish cooling.
