I wanted a cheese steak sub for dinner tonight, but I have very little cash so no going to the sub shop.


There was no sandwich steak on hand, but there was a chicken breast that needed to be eaten. There were sweet peppers and onions from the farmers market. OK... Philly cheese steak chicken! Not a problem.

1/2 large onion, sliced
1 medium sweet pepper (this one was yellowy-purple, very pretty) sliced to match the onion
1 chicken breast, sliced similarly.
Tarrragon (fresh from the garden)
Salt & Pepper to taste.

Waitaminit! Where's the cheese. Oh. No cheese. Just this here brie. OK then
Several slices of brie

Sub roll couple of slices of homemade whole grain bread.

Saute the sliced onion and pepper gently till they soften and the onion starts to colour. I used a bit of olive oil -- use whatever works for you.

Then turn up the heat a bit, throw in the chicken, add salt and pepper, and some tarragon. How much tarragon? How much do you like tarragon? I guess I used the equivalent of about 1 tsp. dry tarragon. Stir fry the whole lot together until the chicken is done and the onions slightly caramelised, but not burnt.

Turn off the heat. Add the slices of brie, and fold the chicken and veggie mixture over them so the brie melts while you look for a sub roll (and substitute a couple of slices of bread) Serve mixture on Sub roll bread.

While this is by no means a real Philly Cheesesteak, it was a damned fine meal. And just what the doctor ordered!


Unfortunately there are no pictures as it was so delicious that I ate it all before I thought of getting out the camera.
