Pumpkin Spice Waffles
Ingredients:
2 1/2 cups cake flour (all-purpose works fine as well, but cake flour makes the waffles more tender)
1 tbsp baking powder
2 tsp cinnamon
1 tsp ginger
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp nutmeg
1/4 tsp cloves
4 large eggs
2 cups buttermilk
1 cup pumpkin purée
1/2 cup dark brown sugar
1/4 cup unsalted butter, melted
1 tsp vanilla extract
Directions:
1) Preheat waffle iron
2) Combine dry ingredients. Feel free to eyeball and vary the spices to taste.
3) Whisk together wet ingredients until smooth.
4) While whisking, add dry indredient mixture and whisk until smooth.
5) Coat hot waffle iron or belgian waffle iron generously with vegetable oil and cook batter on iron according to waffle iron directions.
6) Serve with butter, maple syrup, berry syrup, or pumpkin pie syrup!
They're also great for a quick breakfast if you make a sliiiiightly undercooked batch and freeze them with sheets of wax paper between them! Just pop in the toaster, and voila! Much tastier than store-bought frozen waffles.
Pumpkin Pie Syrup!

1/2 cup canned pumpkin (not canned pie mix)
Add cinnamon, nutmeg, ginger, and clove to taste
Directions:
Combine in small saucepan, stirring gently until warm. Serve as soon as possible.
