Sweet Potato Hash.
Ingredients:
Leftover cooked sweet potato, mashed. (If you don't have any leftovers, you can just boil some up specially for this.)
Leftover cooked white turnip (optional)
Bacon, chopped
Onion, chopped
Mushrooms, sliced
Salt and pepper to taste.
Method.
Fry bacon bits until they're mostly crispy. Unless you don't like crispy bacon, in which case just cook them till they're almost done enough for you.
Toss in onions and cook till they start to brown
Toss in mushrooms at some point (they tend not to take as long as the onions)
When all the above are almost done, add the mashed sweet potato and stir to blend.
Continue to fry, turning chunks from time to time, until it's done. Season with salt and black pepper during this process.
If you think it lacks colour, toss in a handful of frozen peas and continue to cook till they're heated through.
Don't go all exotic with garlic and fancy seasoning -- this is English food and fresh ground black pepper is pushing it. Sweet potato is sufficiently exotic and foreign enough that adding anything else could cause a rupture in the Force :D
I love this. It also works with leftover squash and white potato mixed together, or turnip, parsnip and white potato (though that really needs peas to give it some colour!) It's one of my comfort foods and usually happens on a Monday or Tuesday using up leftover veggies from Sunday dinner.
You could serve it with eggs for a breakfast/brunch.
If you have leftover roast, you can chop up some of that and toss that in.
