So, I tried this out tonight, and I am so enamored.

Sausage, White Beans, and Spinach

I adapted this from a William-Sonoma cookbook. Despite this, it was fast and easy. And tasty!

4 small or 8 large Italian sausages (sweet or hot, you pick!)
1 cup white wine
3/4 cup chicken broth
a bunch of spinach
1 onion, diced small
1 red pepper, diced
2 cloves garlic
2 tablespoons fresh garlic
2 tablespoons fresh chopped oregano (or just chuck some dried in)
2 cans canellini or great northern beans, rinsed and drained

1. Put 1/2 cup white wine and the sausages in a frypan. Bring to a boil over medium-high heat. Cover, reduce heat to medium-low, and cook for 5 minutes. Remove lid, bring heat to medium-high and fry sausages until brown, about 8-10 minutes.

2. While sausage is cooking, in another pan, saute onions and peppers in olive oil. When they are beginning to brown, add garlic and saute until fragrant, about 30 seconds. Add oregano, remaining 1/2 cup wine, broth, beans, and spinach. Bring to a boil. Reduce heat and simmer until liquid has reduced by half. Add sausage, and make sure everything is heated through.

The original recipe doesn't have any spinach, but suggests serving it with arugula. I used more sausage than called for, and didn't have any broth, so I used more wine and some water. It was super good -- and I didn't even know if I liked white beans until today. Enjoy!

Oh yeah! I cook something very similar to this, but I omit the red pepper (I use a pinch of dried pepper flake), though, and use a sturdier green vegie. I like it with kale, collards, or escarole -- the bitterness works really well with it. Hot sausages FTW! And more broth makes it soupy. You can throw in a handful of pasta too, and make it a single pot meal.
