Sweet Cornbread

This recipe is sweeter than my usual cornbread recipe but not overly so. It is also moister than usual and doesn't dry out overnight as some do.
Bonus - super simple. It would be a good recipe to use for a cooking lesson with a child.
Sweet Cornbread
1 1/4 c cornmeal
1 1/4 c buttermilk*
1 c flour
1 c sugar
1 t baking powder
1/2 t salt
1 T vanilla
2 eggs, slightly beaten
5 T butter/margarine, melted and cooled
1. Combine the cormeal and buttermilk and let set 5 minutes.
2. Add remaining ingredients. Stir until combined but don't beat.
3. Pour into a greased 9 inch round cake pan, smooth out top with a rubber spatula if necessary.
4. Bake at 350° F for 40 minutes.
That's it!
* - I didn't have as much buttermilk left to use up as I thought I did and found myself short. I made up the difference with some sour cream I also needed to use up - about half of each. It worked out just fine.
