I make mine New England-style!
You will need:
-1 acorn squash, halved and deseeded
-2T butter, unsalted
-1 cup dark brown sugar
-1/2 cup dark amber maple syrup
-non-stick spray
-2 large ramekins
Spray your ramekins with non-stick spray. If you don't have ramekins, you can use soup bowls or similar.
Poke your squash halves full of holes using a fork or a knife. Be careful not to puncture the skin!
Place each half cut side up in the ramekin and microwave on high for 10-15 minutes or until squash is not rock hard.
Pack the brown sugar, butter and maple syrup into cavity and microwave again for 3-5 minutes, or until sugar is melted.
Consume!
