I was on Facebook tonight and noticed a friend's post. Her fiance wanted her to make him a bacon cheesecake and she was freaking out. EWWW was her response. But it got me thinking. The problem wasn't with his request but her preconceptions on what a cheesecake is. (ie: dessert only.) So I went googling and found the following recipe which I shared with her. It is an appetizer but is definitely a cheesecake. I would serve this in thin slivers with a selection of good hearty breads and crackers.

Apple Blue Cheese Bacon Cheesecake

This unusual savory cheesecake is rich from Parmesan, blue cheese, and cream cheese. The sweet apples and salty bacon are a nice counterpoint to the richness of the cheese. The method requires long slow baking, so plan ahead. As you can tell, this is not a dessert, but an appetizer fit for the finest party.

If you have never tried fried pickles you're in for a real Southern treat. Crispy, tangy and hot, dipped in creamy Ranch dressing. This is a wonderful appetizer.

I made these for the housewarming party I threw last night. They were creamy and rich (perhaps a bit overly rich). These are very filling and kind of dense; this recipe makes 48 but for many occasions 24 would be sufficient. I find that 3 per person is a pretty reasonable expectation, but they're hard to eat a LOT of. They do reheat well, though.


Specialized Equipment: Mini muffin pan

Ingredients and process. )

Allergen notes: Wheat and milk, for sure. Possibly soy from the wrappers. Nothing I used *said* it had nuts in it and I didn't inadvertently kill my friend with the peanut allergy for which I am grateful, but that was all I specifically checked for.

Cuisine/Restriction notes: Very definitely NOT kosher or vegan, although you could possibly substitute turkey bacon and a different cheese? Could be made vegetarian if you subbed in mushrooms for the prosciutto.

I think I've finally gotten the proportions right for this, so I wanted to share. The base is all yogurt, unlike some of the ones out there that want both yogurt and sour cream, which is not so good when I'm trying to up my yogurt intake.

This is an old family recipe (but I think it's Greek, and my family is majority German, so... I am not sure where we got it; maybe from when my grandmother spent time in Greece). It takes awhile to do, so we typically did it for holiday celebrations, especially if there were then some extra helpers in the kitchen.

Boreg are spinach and cheese pastries, and are super yummy. They're an Armenian specialty and one of my favorite foods like... ever.
