Yesterday I purchased some coconut flour. I've never used it before, so do any of ya'll have any tips or favorite recipes using this?  I don't have a problem with gluten so any recipe is fine.

Thanks
CC

My daughter went gluten-free (under doctor's orders) so I became familiar with the different flours.

Coconut flour is a sweet-tasting flour with no gluten, so it's best used in a mix with regular flour if you're making anything that need to rise. There is a faint but definite taste of coconut (but NOT like sweetened coconut, a completely different animal.) I'd use it half and half with all-purpose flour for pancakes or crepes, and in a 1:3 ratio for something like muffins. I'd avoid trying cakes with it.

I've had pancakes with it, and if I was doing it today I'd serve them with grilled pineapple slices.

I made dumplings with coconut flour that turned out quite well; the recipe's under the paleo tag here in the comm.

The thing to remember about coconut flour is that it is exceptionally *thirsty*. However much liquid you think is necessary, I guarantee you won't be enough.

very very dry - needs lots of liquids

here is a recipe for pancakes and yes this feeds 2-3 people well (I think)

2 tbsp sifted coconut flour (yes, that is tablespoons)
2 tbsp coc oil ( I did a mixture of butter and coconut oil
2 eggs
2 tbsp coc milk (you can use any milk)
1/4 tsp salt
1/4 tsp baking powder

Whisk together. cook on greased pan. I top with a bit of really dark honey

...huh, I have never even heard of that, even though I am avoiding gluten myself and use the oil...is it actually chewed-up coconut meat or what...?

Coconut flour is what's left over after all the milk and oil is pressed out of the coconut meat, dried out and ground into a powder.

Coconut flour is weird. My little cousin in gluten and dairy free, so I've done some experimenting with it. It doesn't act like wheat flours at all, and the first couple batches of muffins I made had a really unfortunate texture - we decided it reminded us a lot of sawdust. Seconding the people who have already said coconut flour needs lots of liquids, because it does.

That said, I did manage to make something pretty tasty, in the end. I added almond flour to help offset the sawdust texture. I'd link the recipe, but Livejournal is throwing a fit right now.

It uses coconut flour and almond flour.
