Yesterday I purchased some coconut flour. I've never used it before, so do any of ya'll have any tips or favorite recipes using this? I don't have a problem with gluten so any recipe is fine.

Riverboat Barbecue Sauce
Ingredients
1/2 cup maple syrup
1/2 cup ketchup
1/4 cup orange juice
1 tablespoon dried minced onion
1 tablespoon white vinegar
1 tablespoon steak sauce
1 teaspoon grated orange peel
1 teaspoon prepared mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon hot pepper sauce
3 whole cloves
British Measurements
120 ml maple syrup
120 ml ketchup
60 ml orange juice
4 g dried minced onion
15 ml white vinegar
15 ml steak sauce
2 g grated orange peel
5 ml prepared mustard
3 ml Worcestershire sauce
2 g salt
0.5 g pepper
1 ml hot pepper sauce
3 whole cloves
Directions
In a small saucepan, combine all the ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until the flavors are blended. Remove from the heat. Discard cloves. Cool. Store in the refrigerator.

on 2012-06-12 02:56 pm (UTC)Coconut flour is a sweet-tasting flour with no gluten, so it's best used in a mix with regular flour if you're making anything that need to rise. There is a faint but definite taste of coconut (but NOT like sweetened coconut, a completely different animal.) I'd use it half and half with all-purpose flour for pancakes or crepes, and in a 1:3 ratio for something like muffins. I'd avoid trying cakes with it.
I've had pancakes with it, and if I was doing it today I'd serve them with grilled pineapple slices.

very very dry - needs lots of liquids

2 tbsp coc oil ( I did a mixture of butter and coconut oil
2 eggs
2 tbsp coc milk (you can use any milk)
1/4 tsp salt
1/4 tsp baking powder
Whisk together. cook on greased pan. I top with a bit of really dark honey
