I'm going to a potluck tonight, and I am taking these little morsels of delicious. I found them originally at Jelly Toast, but made several changes to the recipe.

Crostini:

Baguette
Oil for baking

Heat oven to about 180 degrees C. Brush or spray slices of baguette with oil and bake for about 10 minutes in a single layer, turning once, until crunchy to taste. Some people prefer longer.

Goat's cheese

Goat's cheese (crumbled), 250g
Cream, about 1/4 cup

Blend goat's cheese with cream till smooth. Note, this is in NZ where goat's cheese tends to be hard and crumbly. If your goat's cheese is smooth and squishy, omit this step and simply let the cheese come to room temperature so you can spread it

Blueberries

2 cups blueberries (if using frozen, see notes below)
1/4 cup sugar
1Tbs honey
1/4 tsp cinnamon
1/4 tsp nutmeg
Juice of 1 lemon

Mix all ingredients in a small saucepan and bring to the boil. Simmer for about ten minutes until fruit is soft and syrup is thick. You may wish to add some juice (pomegranate, as in the original, or as you prefer) if you want more syrup. I usually make mine with frozen blueberries (see below), which does not need juice.

If using frozen blueberries, which get squishy pretty much as soon as they defrost, my technique is to remove the blueberries from the syrup with a slotted spoon as soon as they are soft. Then boil the syrup down alone. Note that you will have to reduce the syrup more than you think, because the berries will have some juice with them. Although I have not done it, you could boil the syrup down and then add the blueberries, which would be much neater, now I come to think of it.

Assemble:

Smear goat's cheese on the crostini. Add a dollop of blueberries on top. Eat.

Variations:

I have not yet tried, but intend to, the following variations:

Omit spices and add a large sprig of rosemary instead (remove before serving)
As above, with other berries
Use star anise and cardamom in place of cinnamon
Omit spices and honey, use strawberries and garnish with basil
