This is less a recipe to make on its own as a meal idea to be made for when you're batch cooking in the slow cooker or stove top or oven, and are browning huge amounts of mince (ground meat) in the morning or around noon and are noticing you need to eat but also need to finish the prep for the batch cooking DAMMIT!

This meal idea is low-spoon, almost-instant, high-protein, doesn't dirty any more dishes except for a fork, requires only 2 EGGS in additional ingredients, and is pretty much guaranteed to fix your hunger pangs within 5 minutes, give or take.



Serves 1

Ingredients:
2 Eggs
100 g browned mince, drained, in the hot pan leftover from prior cooking (or freshly made if you're making a larger batch of patties)
salt and pepper
condiments for on top after (optional)

Equipment:
frying pan
spatula
fork for eating

Accessibility Notes: This recipe assumes that mince can be browned on a cooker and drained of fat and that eggs can be cracked without exploding all over the kitchen (I only manage this on good days). It cooks in hot fat. Technically, the pan does not ever have to leave the cooker, if you have a second hob to move it to when the eggs are done cooking. Else, it has to come down or the contents of the pan have to immediately be moved to a plate to avoid scorching the eggs.


If you are making anything with 1 kg (2 lbs) of mince or more, the recipe won't notice or care if you siphon off 100 g or so. Leave that amount in the pan after browning and draining your meat. Generously salt and pepper your meat. Mix it up and then scrape the meat together in a half moon and break two eggs over it, next to each other. Once the white starts setting, turn the heat down to medium. Continue with your batch meal prep. At some point, flip the now turning into egg-and-mince patties over to cook on the other side for another two minutes or so. You can turn the heat off and use rest heat if you like. I do.

Serve hot with your choice of Worcestershire sauce, ketchup, hot sauce, cheese, sour cream, fajita seasonings, or just eat plain.

Note: I ate mine cold this afternoon because I got distracted and it was still tasty. Go figure.
