Recipes (well, sort of):

Pan fried gnocchi:

1 package pancetta (or any other pork)
One half large onion, chopped
One bell pepper, chopped
One package (gluten free) gnocchi
Some rosemary
Some olive oil (unless using bacon or pork with decent amount fat)

Cut the pancetta in half. Put half of this in skillet on medium-high heat with onion and pepper and oil as needed.

Pull out pancetta at some point, let the onions/pepper get to deliciously caramelized. Add rosemary about this time.

Once your gnocchi is done boiling, drain and add to the skillet. Add rest of pancetta, make certain there's enough oil, flip it about 2 minutes in, and remove within five minutes.

Waffle iron hashbrowns:

Waffle iron

Get out of waffle iron. Add frozen tater tots to your waffle iron. Keep it pressed down long enough for everything to cook and meld together. You want it crispy-crunchy. Takes about six minutes.

This is less a recipe to make on its own as a meal idea to be made for when you're batch cooking in the slow cooker or stove top or oven, and are browning huge amounts of mince (ground meat) in the morning or around noon and are noticing you need to eat but also need to finish the prep for the batch cooking DAMMIT!

This meal idea is low-spoon, almost-instant, high-protein, doesn't dirty any more dishes except for a fork, requires only 2 EGGS in additional ingredients, and is pretty much guaranteed to fix your hunger pangs within 5 minutes, give or take.

This is a very very very fine pie. I'm not a huge chocolate person, but the texture of this pie works for me. It's a pie where you can hold a slice of in your hand as you run out the door in the morning.

Also! It uses 3 eggs, and the mixture that you get from blowing an egg out to dye its shell for Easter is just exactly right for this pie!

Ingredients:
-1/2 cup (1 stick) butter
-3 squares (1 oz each) baker's (unsweetened) chocolate
-1 cup sugar
-1/3 cup dark corn syrup
-1/4 cup flour
-1 tsp vanilla
-1/4 tsp salt
-3 eggs
-graham cracker crust

In a 2 quart saucepan over very low heat, stirring constantly, melt 1/2 cup butter and 3 oz baker's chocolate. Turn off heat. Stir in 1 cup sugar, 1/3 cup dark Karo corn syrup, 1/4 cup flour, 1 tsp vanilla, and 1/4 tsp salt. Stir in 3 eggs, slightly beaten. Pour into 9 inch graham cracker pie crust. Bake in 350 F oven 30-35 min (or until filling is puffed and center is firm).

If you wanted a fudge nut brownie pie, stir in 1/2 cup chopped walnuts before pouring into crust.

It uses only 1 pot! It takes about 10 minutes to prep!

I saw this recipe the other day, and while I'm not about to start baking, I did have red grapes and rosemary languishing in my refrigerator. So I bought some readymade focaccia.

I'm trying to bring my lunch to work every day, to save money. I'm looking for recipe ideas that

a) can be served cold since I don't have access to a way to heat up my food.
b) don't have processed meats in them. (Ideas for how to use left over chicken, pork, etc. would be great, but I don't eat commercial lunch meat.)
c) are quick to prepare.
d) have veggies in them.
e) can be transported easily. (I take public transit to work, so things that pack light and small are important.)

I like healthy foods, and love tofu, and I try to avoid processed foods when I can.

Ideas? As a thank you, I offer up one idea that I came up with the other day.

Down the way from where I live there's a bookstore I really like-- it carries new books, used books, old books, sheet music, CDs, and records. They were having another cookbook sale today (they seem to do those fairly frequently or maybe I'm just really good at noticing it when they do) and I picked up 'French Cooking in Ten Minutes' by Edouard de Pomiane, written in French in 1930, first translated into English in 1977. Just flipping through it I've already found two recipes which amused me, so I though I'd share:


Lobster with Mayonnaise
Buy half a cooked lobster. Serve it with a homemade mayonnaise. That won't take very long to make, so spend the extra time decorating the serving platter with a few lettuce leaves, some black and green olives, capers, or anything else that comes to mind. You will feel yourself becoming an artist.


Fried Mackerel
Have your fish seller clean a mackerel. Wash it and wipe it off when you get home. Make 2 or 3 slits in each side with a knife, and roll the fish in flour. Cook it for 10 minutes in a frying pan containing smoking hot oil or very hot butter. Sprinkle the mackerel with salt and chopped parsley before serving.

I forgot to tell you to open the window. I'll bet you did, anyway.
