Because sometimes you just want simple, uncomplicated food....
Turkey Cutlets
I dipped the cutlets in a beaten egg and then into coarse matzo meal* that had been seasoned with black pepper, italian seasoning and paprika.
Once breaded, I fried on medium for about 5 minutes, turned and cooked a couple of minutes more until done. I did not add any oil or fat to my non-stick pan, though you could.
Served with jasmine rice and a simple salad of romaine lettuce and roma tomatoes. I used french dressing on my salad and dipped a couple of bites of turkey into the remnants, just 'cuz - it was pretty good.
* I don't know if coarse matzo is sold in stores - I just made my own by throwing matzo through the food processor to replenish my matzo canister. Matzo meal can be expensive, so I wait until just after passover when the prepared matzo are on clearance and buy several boxes at about 1/3 of the normal price (which at full price is still less than matzo meal) and process it myself. Takes only a couple of minutes to do an entire box.
