Marinated Vegetable Salad

I came up with this salad for a holiday dinner last year. I liked it so much that this year, I made it to serve to people outside my actual family, and they seemed to really enjoy it, too!
1 can artichoke hearts, chopped
1 can hearts of palm, chopped
1/2 c. sliced green olives
1 bell pepper, diced
1-2 stalks of celery, diced
Dressing:
1 clove garlic
1/4 t. salt
1 t. dijon mustard
1 T. vinegar of your choice (I use sherry vinegar, which is awesome)
2 T. olive oil
mixed salad greens, optional
Combine first five ingredients. Mash the garlic clove with the salt, then whisk together with the remaining dressing ingredients. Add dressing to vegetables and marinate for at least a couple hours, or overnight. Can be served as is, or over mixed salad greens. If you're serving it over greens, you might want to double the amount of dressing.
