Slow-ish cook the beef mince and eggplant together in tasty sauces - oyster sauce and beef stock or hoisin sauce and soy sauce and tomato or tomato and beef stock. Tomato can be a tin of, sugo or paste? Then steamed bok choy and rice for sides.
The slow-ish cooking would be my first instinct too. If you're as lazy as me, you could throw the bok choy into the same pan a few minutes before the end of the cooking time, so it gets nicely wilted but not overcooked.
If you have any on hand, harissa can also work well with mince and eggplant.
I've seen various versions of harissa, so even if you haven't got all of those ingredients, as long as you've got a sauce with hot chili peppers, you're probably good *g*.
But red pepper and paprika and garlic all go well with the mince/eggplant mix.
