Inspiration?

So, I have bok choy, beef mince, and egg-plant. What can I make with them? No allergies to consider :)

I've seen various versions of harissa, so even if you haven't got all of those ingredients, as long as you've got a sauce with hot chili peppers, you're probably good *g*.

But red pepper and paprika and garlic all go well with the mince/eggplant mix.

I was going to second the oyster sauce and bok choy at the last, but I was definitely going to suggest garlic in there.

Salt/pepper/sugar to taste, as always.
