Accessibility: this dish takes a long time, and involves three separate dishes. All steps are fairly simple, though.
Dietary notes: Gnocchi not essential, some other pasta would do just as well; vegetarians might find the onion and tomato sauce delicious on its own (I think it'd benefit from something else added to it though - pine nuts? A salty cheese?).



4 medium tomatoes
Olive oil
Cracked black pepper
1 tsp sugar
1 medium onion
Fresh thyme
150 grams pancetta
Gnocchi for 2-4 people

- Quarter the tomatoes, lay them in a baking dish. Drizzle with olive oil, sprinkle with pepper and sugar. Bake in a moderate oven for about 30 minutes.
- Finely dice the onion. Heat some olive oil in a frying pan (skillet) and slowly fry the onion and thyme leaves over a low heat for 20-25 minutes (the onion will go sweet and caremely).
- Dice pancetta and add to the onion; raise heat a little and fry until crispy.
- Add roasted tomatoes, stir for about 2 minutes. Stir gnocchi through sauce.

Top with parmesan if desired.

This served us two medium and two small meals.
